Ingredients

scaled from 3 servings
  • 3/4 lb boneless pork chops, about 1 inch thick
  • 3/4 lb green beans, trimmed
  • 3/4 tbsp olive oil
  • 3/4 tbsp butter
  • 1/4 tsp garlic powder
  • 1/4 tsp dried thyme
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 lemon

Method (tap to check — screen stays awake)

  1. Pat the pork chops dry with paper towels, then season both sides with garlic powder, thyme, 1/2 tsp salt, and pepper.
  2. Trim the stem ends from the green beans and cut any especially long beans in half.
  3. Heat olive oil in a large skillet over medium-high heat for about 2 minutes, until it shimmers.
  4. Add the pork chops and cook for 4-5 minutes per side, until browned and the center reaches 145°F on an instant-read thermometer.
  5. Move the chops to a plate and rest them for 3 minutes so their juices settle before serving.
  6. Add the green beans and butter to the same skillet and cook over medium heat for 7-9 minutes, stirring every 2 minutes, until tender-crisp and lightly browned.
  7. Squeeze the lemon over the green beans and season with the remaining salt if needed.
  8. Serve the pork chops with the green beans.
