Ingredients

scaled from 4 servings
  • 1 lb Boneless, skinless chicken breasts
  • 3/4 lb Broccoli florets
  • 1/2 cup Shredded cheddar cheese
  • 1/2 tbsp Olive oil
  • 1/2 tsp Garlic powder
  • 1/2 tsp Kosher salt
  • 1/4 tsp Black pepper

Method (tap to check — screen stays awake)

  1. Heat the oven to 400°F and lightly oil a rimmed baking dish with about 1 tsp of the olive oil.
  2. Pat the chicken dry and arrange it in the baking dish. Rub with the remaining oil, garlic powder, salt, and pepper.
  3. Cut the broccoli into florets about 1 to 1 1/2 inches wide, then spread them around the chicken in the dish.
  4. Bake for 20 minutes, until the broccoli is bright green and beginning to soften and the chicken is nearly cooked through.
  5. Sprinkle the cheddar evenly over the broccoli and chicken, then bake for 5–10 minutes more, until the cheese is melted and the thickest part of each breast reads 165°F.
  6. Rest the chicken for 5 minutes before slicing so it stays juicy, then serve with the broccoli.
