- 4 cups day-old jasmine rice
- 12 oz medium shrimp, peeled
- 1 cup pineapple chunks, fresh or canned drained
- 2 eggs
- 4 cloves garlic, minced
- 4 scallions, sliced
- 1/3 cup cashews, roasted
- 1 tsp curry powder
- 2 tbsp soy sauce
- 1 tbsp fish sauce
- 3 tbsp vegetable oil
