  • 4 cups day-old jasmine rice
  • 12 oz medium shrimp, peeled
  • 1 cup pineapple chunks, fresh or canned drained
  • 2 eggs
  • 4 cloves garlic, minced
  • 4 scallions, sliced
  • 1/3 cup cashews, roasted
  • 1 tsp curry powder
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 3 tbsp vegetable oil
