  • 6 cups beef stock
  • 2 pods star anise
  • 1 cinnamon stick

  • 2 tbsp fish sauce
  • 2 cups bean sprouts
  • 1/4 cup cilantro, chopped
  • 3 green onions, sliced

Method

  1. Simmer the beef stock with star anise, cinnamon, garlic, soy sauce, and fish sauce for 25 minutes to build the aromatic broth.
  2. Meanwhile, soak the rice noodles in warm water 15 minutes, then blanch in boiling water 30 seconds and divide into bowls.
  3. Blanch the bean sprouts in the same water for 10 seconds and add to the bowls.
  4. Drop the thinly sliced beef into the simmering broth for 60 seconds until just cooked.
  5. Ladle the hot broth and beef over the noodles and top with cilantro and green onions.
