Ingredients
- 2 cans (400g each) canned chickpeas
- 500g, cubed butternut squash
- 1 can (400g) canned diced tomatoes
- 1, diced yellow onion
- 2 tsp ras el hanout
- 1/2 tsp ground cinnamon
- 1/3 cup, chopped dried apricots
- 1 cup whole-wheat couscous
- 3 tbsp extra-virgin olive oil
- 1/4 cup, chopped fresh cilantro
