  • 1 lb beef sirloin steak
  • 1 large red onion
  • 2 roma tomatoes
  • 1 tbsp aji amarillo paste
  • 3 tbsp soy sauce
  • 2 tbsp red wine vinegar
  • 3 cups frozen french fries
  • 1.5 cups white rice
  • 1/4 cup fresh cilantro
  • 3 garlic cloves

Method

  1. Cook white rice per package and bake french fries at 425F for 20 minutes until crisp.
  2. Slice sirloin into thin strips, pat dry, and season with salt and pepper.
  3. Heat a wok or large skillet over high heat with oil and sear beef 2 minutes until browned; remove.
  4. Add red onion wedges and cook 2 minutes, then stir in garlic and aji amarillo paste for 30 seconds.
  5. Add tomato wedges, soy sauce, and vinegar; toss 2 minutes until tomatoes just soften.
  6. Return beef, add fries and cilantro, toss 1 minute, and serve over rice.
