Ingredients

  • 4 pork loin chops
  • 2 cups panko breadcrumbs
  • 0.5 cup all-purpose flour
  • 2 eggs
  • 0.25 head green cabbage
  • 6 tbsp tonkatsu sauce
  • 4 cups cooked short-grain rice
  • 3 cups neutral frying oil

Method

  1. Snip the fat edge of each chop to stop curling and pound to even thickness. Season with salt and pepper.
  2. Dredge pork in flour, dip in beaten egg, then press into panko for a full coat.
  3. Heat oil to 170C and fry chops 4-5 minutes per side until deep golden and internal temp reaches 63C.
  4. Rest cutlets on a rack 3 minutes, then slice crosswise into strips.
  5. Shred cabbage very finely and soak in ice water 5 minutes for crispness, then drain.
  6. Serve tonkatsu with the cabbage, rice, and tonkatsu sauce for drizzling.
