Ingredients

  • 1 kg pork shoulder, cut into strips
  • 3 tbsp hoisin sauce
  • 3 tbsp honey
  • 2 tbsp light soy sauce
  • 2 tbsp Shaoxing wine
  • 1 tsp five-spice powder
  • 4 cloves, grated garlic
  • 1 tbsp red fermented bean curd
  • 2 tbsp sugar

Method

  1. Whisk all ingredients except half the honey into a marinade and coat the pork strips.
  2. Marinate covered in the fridge for at least 4 hours or overnight, reserving the leftover marinade.
  3. Roast on a rack at 425F for 20 minutes, then flip.
  4. Simmer the reserved marinade with the remaining honey into a glaze.
  5. Brush the pork with glaze and roast 15 to 20 minutes more until caramelized at the edges and 145F inside.
  6. Rest 10 minutes, then slice; portion and refrigerate or freeze for later meals.
