- 2 racks St. Louis-cut pork spare ribs
- 3 tbsp brown sugar
- 2 tbsp paprika
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp kosher salt
- 1 tbsp black pepper
- 1/2 cup apple juice
- 4 chunks cherry wood chunks

- Peel the membrane from the back of each rib rack and pat dry.
