Ingredients
- 14 oz Firm tofu
- 1 cup Pineapple chunks
- 2 medium Bell peppers (mixed colors)
- 2 medium Carrots
- 3 Garlic cloves
- 3 tbsp Soy sauce
- 1 tbsp Sesame oil
- 2 tbsp Vegetable oil
- 1 tbsp Cornstarch
- 3 stalks Green onions
- 4 cups Cooked jasmine rice
Method
- Press and cube the tofu. In a small bowl, toss the tofu with cornstarch to lightly coat.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add tofu and cook until golden and crispy, about 5-7 minutes. Remove and set aside.
- In the same skillet, add sesame oil. Sauté minced garlic until fragrant, about 30 seconds.
- Add sliced bell peppers and carrots to the skillet. Stir-fry for about 4-5 minutes until vegetables are tender-crisp.
- Add pineapple chunks and cooked tofu back into the skillet. Pour soy sauce over the mixture and stir well.
- Cook for an additional 3-4 minutes, allowing flavors to meld and sauce to thicken slightly.
- Chop green onions and sprinkle over the stir-fry. Serve hot over cooked jasmine rice.
