Ingredients
- 1 cup quinoa
- 2 cups water
- 2 medium avocado
- 1 cup cherry tomatoes
- 1 can (15 oz) canned black beans
- 1 cup corn kernels (frozen or canned)
- 1 small red onion
- 1/4 cup cilantro
- 1 lime
- 2 tablespoons olive oil

Method
