  • 4 pieces (about 1 lb) boneless, skinless chicken breasts
  • 2 large medium sweet potatoes
  • 2 tablespoons olive oil
  • 2 medium bell peppers (red, yellow, or green)
  • 1 medium red onion
  • 3 cloves garlic cloves
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika

Method

  1. Dice the sweet potatoes into small cubes. Peel and chop the red onion and garlic. Slice the bell peppers into strips.

  5. Add the sweet potato cubes to the skillet, season with a little salt, and cook for about 10-12 minutes, stirring occasionally, until tender.
  6. Slice the cooked chicken and add it back to the skillet, mixing everything well to combine and heat through.
  7. Garnish with chopped cilantro and squeeze fresh lime over the top before serving.
