Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 3 large Bell peppers (red, yellow, or green)
  • 1 large Onion
  • 3 Garlic cloves
  • 1 (14 oz) can Canned diced tomatoes
  • 2 tbsp Olive oil
  • 12 oz Dried spaghetti
  • 1/4 tsp Red pepper flakes
  • to taste Salt and pepper
  • a handful Fresh basil (optional)

Method

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Drain and set aside.
  2. While the pasta cooks, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the Italian sausage, breaking it apart with a spoon, and cook until browned, about 5-7 minutes.
  3. Add diced onions and sliced bell peppers to the skillet with the sausage. Cook until vegetables are tender, about 5 minutes.
  4. Stir in minced garlic and cook for another minute until fragrant. Add canned diced tomatoes, red pepper flakes, salt, and pepper. Simmer for 10 minutes to let flavors meld.
  5. Combine the cooked pasta with the sausage and pepper sauce. Toss to coat evenly and cook for another 2-3 minutes to heat through.
  6. Taste and adjust seasoning if needed. Garnish with chopped fresh basil if desired.
  7. Serve hot, dividing evenly among four plates.
