  • 200g Paneer (Indian cottage cheese)
  • 4 cups Fresh spinach
  • 1 medium Onion
  • 1 large Tomato
  • 3 Garlic cloves
  • 1 inch piece Ginger
  • 1 Green chili (optional)
  • 2 tbsp Oil (vegetable or mustard)
  • 1 tsp Cumin seeds
  • 1/2 tsp Turmeric powder
  • to taste Salt
  • 1/2 tsp Ground coriander

Method

  1. Dice the paneer into small cubes. Finely chop the onion, tomato, garlic, ginger, and green chili (if using).
  2. Heat oil in a large skillet over medium heat. Add cumin seeds and let them crackle.
  3. Add chopped onion, garlic, and ginger; sauté until translucent. Add turmeric, ground coriander, and salt; cook for 1 minute.
  4. Stir in chopped tomato and cook until soft and oil begins to separate.
  5. Add spinach in batches, stirring until wilted. Cook for 2-3 minutes until fully wilted and flavors meld.
  6. Gently add paneer cubes to the skillet and stir to coat with spices and vegetables. Cook for another 3-4 minutes.
  7. Taste and adjust salt or spices as needed. Serve hot with rice or naan.
