Ingredients

  • 1 lb Large shrimp (peeled and deveined)
  • 1 cup Orzo pasta
  • 1 cup Cherry tomatoes
  • 1 Cucumber
  • ½ cup Feta cheese
  • ¼ cup Kalamata olives
  • 2 tbsp Olive oil
  • 1 Lemon
  • 2 cloves Garlic
  • 1 tsp Dried oregano
  • to taste Salt
  • to taste Black pepper

Method

  1. Cook the orzo in boiling salted water according to package instructions until al dente. Drain and set aside.
  2. While orzo cooks, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the garlic and cook until fragrant, about 30 seconds.
  3. Add the shrimp to the skillet, season with salt, pepper, and oregano. Cook until pink and opaque, about 3-4 minutes per side.
  4. In a large bowl, combine cooked orzo, cherry tomatoes (halved), sliced cucumber, Kalamata olives, and crumbled feta cheese.
  5. Squeeze lemon juice over the mixture and drizzle with the remaining olive oil. Toss gently to combine.
  6. Add the cooked shrimp on top of the salad mixture and serve immediately, garnished with extra oregano if desired.
