  • 14 oz firm tofu
  • 3 tbsp soy sauce or tamari
  • 1 tbsp sesame oil
  • 2 cups fresh broccoli florets
  • 2 large carrots
  • 1 red bell pepper
  • 3 stalks green onions
  • 3 garlic cloves
  • 1-inch piece fresh ginger
  • 4 cups cooked jasmine rice
  • 2 tbsp cornstarch
  • 1/4 cup vegetable broth

Method

  1. Press and cube the tofu. Toss with 1 tablespoon soy sauce and 1 tablespoon cornstarch. Pan-fry in a little sesame oil until golden and crispy, then set aside.

  6. Top each rice bowl with the sautéed vegetables and tofu. Garnish with sliced green onions.
