Ingredients

  • 1 lb Boneless, skinless chicken breasts
  • 1 cup Fresh snow peas
  • 1 inch piece Fresh ginger root
  • 3 cloves Garlic cloves
  • 2 stalks Green onions
  • 3 tbsp Soy sauce (gluten-free)
  • 1 tsp Sesame oil
  • 2 tbsp Vegetable oil
  • to taste Salt
  • to taste Black pepper

Method

  1. Slice the chicken breasts into thin strips. Peel and finely chop the ginger. Mince the garlic. Chop the green onions into 1-inch pieces.
  2. In a bowl, combine the chicken strips with 1 tablespoon of soy sauce, half of the ginger, and half of the garlic. Let marinate for 10 minutes.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and stir-fry until cooked through, about 5-7 minutes. Remove from skillet and set aside.
  4. In the same skillet, add the remaining ginger and garlic, cook for 1 minute until fragrant.
  5. Add snow peas to the skillet, stir-fry for 2-3 minutes until bright green and slightly tender.
  6. Return the chicken to the skillet. Add the remaining soy sauce, sesame oil, and season with salt and pepper. Stir well to combine and cook for another 2 minutes.
  7. Sprinkle with chopped green onions and serve hot.
  8. Enjoy your quick, gluten-free stir-fry with steamed rice or enjoy on its own.
