  • 1 lb boneless skinless chicken thighs
  • 2 medium bell peppers (mixed colors)
  • 2 medium zucchini
  • 4 large garlic cloves
  • 1 inch piece fresh ginger
  • 3 tbsp coconut aminos
  • 2 tbsp olive oil
  • 2 stalks scallions
