- 1 lb boneless skinless chicken thighs
- 2 medium bell peppers (mixed colors)
- 2 medium zucchini
- 4 large garlic cloves
- 1 inch piece fresh ginger
- 3 tbsp coconut aminos
- 2 tbsp olive oil
- 2 stalks scallions
