  • 2 large Sweet potatoes
  • 1 large Red bell pepper
  • 3 stalks Green onions
  • 1 inch piece Ginger
  • 3 cloves Garlic
  • 4 large Eggs
  • 2 tbsp Coconut oil
  • 1 tsp Five-spice powder
  • to taste Salt
  • to taste Black pepper

Method

  1. Peel and dice the sweet potatoes into small cubes.
  2. Chop the red bell pepper, green onions, ginger, and garlic finely.
  3. Heat 1 tablespoon of coconut oil in a large skillet over medium heat.
  4. Add the sweet potatoes to the skillet, cook for 8-10 minutes, stirring occasionally until they start to soften.
