  • 2 medium Sweet potatoes
  • 2 tablespoons Olive oil
  • 2 cups chopped Kale
  • 1 medium Red bell pepper
  • 1 small Onion
  • 4 large Eggs
  • to taste Salt
  • to taste Black pepper

Method

  1. Peel and dice the sweet potatoes into small cubes.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sweet potatoes and cook, stirring occasionally, until browned and tender, about 8-10 minutes.
