Ingredients
- 1 lb boneless, skinless chicken breasts
- 2 bell peppers (mixed colors)
- 2 cups broccoli florets
- 2 medium carrots
- 3 garlic cloves
- 1-inch piece fresh ginger
- 1/4 cup tamari gluten-free soy sauce
- 2 tablespoons olive oil
- 1 teaspoon sesame oil (optional)
- 2 stalks green onions
- 1 tablespoon sesame seeds (optional)
Method
- Slice chicken breasts into thin strips. Mince garlic and ginger. Chop bell peppers, carrots, and green onions.
- Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add chicken strips and cook until browned and cooked through, about 5-7 minutes. Remove and set aside.
- In the same skillet, add remaining olive oil. Add garlic and ginger, sauté for 30 seconds until fragrant.
- Add bell peppers, carrots, and broccoli to the skillet. Stir-fry for about 5-7 minutes until vegetables are tender-crisp.
- Return cooked chicken to the skillet. Add tamari and sesame oil (if using). Toss everything together and cook for another 2-3 minutes to blend flavors.
- Remove from heat. Garnish with chopped green onions and sesame seeds (if using).
